Fruit Cake

175g Butter

175g Light Brown Sugar

225g Plain Flour

1 tp Baking Powder

3 eggs

1 tp Mixed Spice

50g Ground Almonds

1 glug of milk

150g Sultanas

150g Currants

1 deep cake tin

1 wire rack

1 wooden spoon

Baking Paper

Tin Foil

1 bowl

  • Set your oven to Gas Mark 2
  • Grease your cake tin then cut some baking paper up and line it in the tin (so the mixture doesn’t stick)
  • Mix the Butter and Brown Sugar together intill it’s light and fluffy
  • Mix in the Plain Flour, teaspoon of baking powder and three eggs into the mixture.
  • Add a teaspoon of Mixed Spice
  • Then add a glug of milk to ease the mixture and mix it in.
  • Fold in the ground almonds (don’t use a food mixer for this part onwards)
  • Fold in the currants and sultanas
  • Then put the mixture in the tin and put it in the oven for 1 hour and 30 minutes
  • When it is done, take the cake out by the baking paper, and put it to cool on a wire rack.
