Fruit Cake
175g Butter
175g Light Brown Sugar
225g Plain Flour
1 tp Baking Powder
3 eggs
1 tp Mixed Spice
50g Ground Almonds
1 glug of milk
150g Sultanas
150g Currants
1 deep cake tin
1 wire rack
1 wooden spoon
Baking Paper
Tin Foil
1 bowl
- Set your oven to Gas Mark 2
- Grease your cake tin then cut some baking paper up and line it in the tin (so the mixture doesn’t stick)
- Mix the Butter and Brown Sugar together intill it’s light and fluffy
- Mix in the Plain Flour, teaspoon of baking powder and three eggs into the mixture.
- Add a teaspoon of Mixed Spice
- Then add a glug of milk to ease the mixture and mix it in.
- Fold in the ground almonds (don’t use a food mixer for this part onwards)
- Fold in the currants and sultanas
- Then put the mixture in the tin and put it in the oven for 1 hour and 30 minutes
- When it is done, take the cake out by the baking paper, and put it to cool on a wire rack.
